Thong Muan is the Thai sweet, that is very popular to the consumers. At present, the manufacturers have developed the production process for distributing in and out the country. However, the process of Thong Muan sweet production still uses a lot of manpower. This causes the products unhygienic and may have the disease contamination easily. Including, the quality of Thong Muan sweet is unsteady, which causes the in efficiency of production and insufficient to market needs.

Food Technology Department, Thailand Institute of Scientific and Technological Research (TISTR), which has been supported the technical assistance from the GTZ, Germany in the Project on Promotion of Production Technology Development and Processing in food industry. The project aims to enhance the competitiveness of the country. It has succeeded in design and development of Automatic Thong Muan Sweet Roller. The new technology could increase capacity in production to the Thai sweet export manufacturers.

Automatic Thong Muan Sweet Roller is designed and constructed by using raw materials in the country, with the efficiency to produce all pieces of Thong Muan sweets in diameter within the standard. It could produce Thong Muan sweet of about 200,000 pieces per month.

Operation principle. First, Thong Muan flour is roasted until it is cooked. Then it is brought to Automatic Thong Muan Sweet Roller through the roller to the forming set in order to form Thong Muan pieces as the required size. It takes only 10-15 seconds for being stable Thong Muan pieces. The unrolling machine will open and feed Thong Muan pieces into the tray. The size of Thong Muan pieces will be in the standard in all pieces.

Automatic Thong Muan Sweet Roller is the R&D result. It could increase production capacity to the manufacturers and reduce the manpower use. The product quality is good and acceptable to the foreign market. It is the technology responding the Thai sweet export industry needs.
