The problem, which the food industry is facing nowadays, is in the area of raw material preparation for food processing. For example , the cutting process, to obtain desirable size and shape for fruits and vegetable , is slow and inconsistent in quality because of human labour. This includes unhygienic issue too.

           Thailand Institute of Scientific and Technological Research (TISTR) , by the Food Technology Department. Realizes this problem so it has designed and development fruits and vegetable cutting machine which is capable of cutting desirable shape in a short time. The product is consistent in size and shape as well as meeting consumption standard.

          The machine consisted of conical bucket for raw material to be cut. This bucket is slanted into the main chamber where series of knives are located. The series for dicing can be adjusted to control thickness of cut vegetable and fruits. The blade will rotate with centrifugal force so the cut pieces are thrown onto conveyor belt and flow out of the machine. The machine is activated by the feeding of raw material through the tunnel end of which the series of knives are waiting. There are three series: slicing, dicing , and stripping. They can be changed and cleaned when taken out of the cutting chamber.

          The fruit and vegetable in the round or round-ish shape with the size of 20-70 mm can be cut by this machine. The slicing blades yield 5-25 mm in size. The production rate is 250-300 kg per hour.

          The fruit and vegetable cutting machine is an innovation for more efficient production. It can be applied to a variety of raw material. Using it also cut down labour need, making it so useful in Thai food industry.
